C H O C O L A T E P E R S I M M O N
A variety of persimmon that is sweet and mild in flavor. It is an astringent variety but is ready to be eaten when it is still on the firm side, unlike other astringent varieties.
The Persimmon is the edible fruit of trees in the ebony wood family. Their flavor is reminiscent of honey.
There are two types of persimmons, astringent and non-astringent. Astringent persimmons have high levels of tannins and can not be eaten until they are very soft.
H E A L T H B E N E F I T S
Like all orange-colored fruits and vegetables, persimmons contain a large amount of beta carotene, which the body uses to synthesize Vitamin A. This makes it healthy for combating cancer and for maintaining heart health. Persimmons are also a good source of fiber which helps aid digestion.

Persimmons originated in China.
S E L E C T I O N & S T O R I N G
Select chocolate persimmons that are yielding, soft yet still on the firm side. Choose fruits that are deep orange at the stem. A sign of high astringency with this variety is a light color at the stem area. It will keep several weeks without refrigeration.
P R E P T I P S
Persimmons are eaten fresh (the skin is edible but is sometimes peeled before eating), eaten dried, or are cooked by being baked into breads or other goods. It adds moisture in the same manner as applesauce.
